1/3 cup freeze-dried berries (raspberries or strawberries as preferred)
2 tbsp shredded coconut, unsweetened
Directions
Place the bites ingredients in a food processor and pulse for about one minute (they start to stick together). Form the mixture into 14-16 round balls.
For the coating, place the freeze dried raspberries or strawberries in the food processor and pulse until they are completely fine, about one minute. Add the shredded coconut and mix together. Spread this berry and coconut mixture over a plate and roll each of the bites in it to coat it.
Place the protein bites in the fridge for 20-30 minutes to firm up. Keep them refrigerated until they’re ready to eat. The protein bites can be stored in the fridge for up to one week.
