Pumpkin Spiced Chia Pudding

Ingredients

  • 1/4 cup chia seeds
  • 1/2 cup coconut milk (can use full fat from a can for extra creaminess, or a lighter version works as well)
  • 1/2 cup almond milk
  • 1-2 tbs pure maple syrup (2 makes it sweeter)
  • 1/4 cup pumpkin puree (canned is fine, but not pumpkin pie filling)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • coconut yogurt (I love the So Delicious brand) or whipped coconut cream to top (optional)

Directions

Mix all ingredients except the coconut yogurt.  Cool in an airtight container in the fridge for 2 hours or overnight.  Add optional topping, and enjoy!


I like to make these in mason jars for easy grab and go breakfasts!
