1 (6-oz) can wild salmon, drained, or 6-oz cooked wild salmon
1 TB capers, drained
1 TB finely chopped red onion
2 TB hummus
1 TB olive oil
2 TB rice wine vinegar
1 TB fresh dill, chopped, or 1-2 tsp dried dill
3 C salad greens, rinsed and dried
Sea salt and freshly ground pepper
Combine the first 7 ingredients in a large bowl and mix well.
Add salad greens, and toss to combine. You want the greens coated with the salmon mixture.
Season with sea salt and freshly ground pepper, and enjoy.
A favorite, simple yet delicious salad that comes together quickly and easily. Can use any type of greens - I prefer kale or spinach to pack in the nutrients.
