Cantaloupe Basil Cucumber Salad

Ingredients

  • 1/2 cantaloupe, seeds and skin removed, and cut into bite-sized chunks
  • 1 cucumber, scrubbed, cut in half lengthwise, seeds scraped out, then sliced into thin half-moons
  • 1/2 small red onion, chopped into small pieces
  • 1-2 small handful basil leaves, thinly sliced
  • 3 TB sunflower seeds
  • Juice of a lemon
  • 2 TB rice wine vinegar
  • 2 TB olive oil
  • 1-2 tsp sea salt

Directions

Place all ingredients into a large bowl and toss to combine. 

Serve at room temperature – this salad is surprisingly filling and very delicious!
