Yields

2-4 servings

Ingredients

  • 2-3 potatoes, diced
  • 1 zucchini, diced
  • 1 small yellow onion, diced
  • 8 oz mushrooms, foot removed and diced
  • 1 green bell pepper, diced
  • 2 chicken sausages (optional)*, cut into small pieces
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 2 Tbs olive oil
  • salt & pepper to taste

Directions

1) Heat large pan on medium heat and add olive oil.  Add sausage and potatoes.  Stir and allow to cook for about 7 mins, until potatoes are tender.

2) Add the rest of the vegetables and spices, and stir well.  Allow to simmer together and cook for another 7-8 mins until all vegetables are tender and potatoes are starting to crisp.  Keep stirring to keep from burning or sticking to the pan.

3) Top with salt & pepper to taste, and serve!


This was one breakfast that complied with our elimination diet - a nice break from gluten free oatmeal! A delicious, savory option for anyone looking to make a healthy breakfast without eggs or dairy.

Notes

*You can omit the sausage and this becomes a vegan dish.
