Balsamic Glazed Salmon

Ingredients

- 4 salmon fillets (6 oz each)

- 1 tsp oil for cooking

- sea salt and fresh ground black pepper

- 1/4 cup orange juice

- 2 TBS honey

- 1 TBS white wine vinegar

- 3 TBS balsamic vinegar

- A pinch dried rosemary

- A pinch red pepper flakes (to taste)

Directions

1) Season salmon fillets with salt and pepper

2) To cook salmon, can either heat frying pan with 1 tsp oil on medium-high heat, or heat grill.  Place salmon on heated pan/grill and cook for 5 minutes, flip and cook other side to desired doneness or until fish flakes apart.  Remove from heat and tent with foil.

3) Wipe out pan, and reduce heat to medium-low.  Add orange juice, honey, white wine vinegar, balsamic vinegar, rosemary and pepper flakes to pan.  Allow glaze to come to a simmer, and cook until becomes thick & syrupy - about 5 minutes - reducing  to 1/4 cup.

4) Pour glaze over salmon and enjoy!

Notes

This recipe is super simple, and the glaze really cuts any strong salmon taste.  The balsamic makes for a perfect compliment to the fish.  I love using the grill for the fish as it's easy clean-up, and I don't have to deal with the house smelling like fish for the evening!
