10 minute Bone Broth and Veggie Soup

Yields

2-3 servings

Ingredients

Bone Broth (1.5 - 2 quarts)

Stir fry veggies 

2 eggs

scallions - chopped (for garnish)

Toasted Sesame Seed Oil

Coconut Aminos

salt, pepper and other spices to taste

Nori sheets (optional)

Cooked Noodles of choice (optional)

Directions

Stir fry vegetables and cook eggs (any way you choose).  To make this easy, I buy the frozen stir-fry veggies that you can just pop in the microwave and steam in the bag on their own.  I scrambled the eggs as this was also the easiest, and added to the veggies.

Heat the bone broth over a low heat on the stove.  Add veggie/egg mixture, a splash of toasted sesame seed oil and a splash of the coconut aminos (this is in place of traditional soy sauce).  Add salt, pepper and any other spices to taste, as well as the scallions for garnish.  If you are using  nori sheets (amazing source of minerals) and cooked noodles, can also add at this point.

Remove from stove, and enjoy!

Notes

This soup is a great, simple, healing meal that makes for a good transition from the cold winter months to the warmer spring and summer months.  Bone broth is an amazing source of collagen - vital of joint health, as well as great for your bones, hair and nails.  It also has gut healing properties, and overall is very warming in your body.  I buy the organic pre-made bone broth from my local health food store as this is much easier than spending hours making my own!
